Bolillo Sandwich Bread

  • 2 Teaspoons-Active Dry Yeast
  • 1/3 Cup-Granulated Sugar
  • 1 ½ Cups-Warm Water-105-110 degrees
  • 3 1/2 -4 Cups-All Purpose Flour
  • 2 Teaspoons-Kosher Salt
  • 3 Tablespoons-Unsalted Butter-softened to room temperature
  • To Coat-Olive Oil
  • 1 Each-Egg White-beaten with 1 tablespoon water

Directions

  1. Dissolve yeast in water with sugar in bowl of stand up mixer.
  2. Stir to dissolve and mix in 2 cups of flour.
  3. Cover with plastic wrap and let stand for 1 hour.
  4. Remove plastic wrap; add butter, salt, 1 cup of remaining flour.
  5. Fit mixer with dough hook and combine on low speed to incorporate.
  6. Add remaining flour in 1/4 cup increments until a soft dough will form and pull away from the sides of bowl.
  7. Continue to knead dough for about 5 minutes.
  8. Drizzle a little oil on dough and roll to coat.
  9. Cover bowl and let rise for 1 hour.
  10. Divide into 4 small portions and shape into a loaf.
  11. Place on a sheet tray, make a shallow cut each loaf lengthways.
  12. Combine egg white with water and brush each loaf.
  13. Cover with plastic wrap and let rise 30 more minutes.
  14. Preheat oven to 400 degrees.
  15. Bake loaves for 10 minutes.
  16. Brush each second time with egg mixture and rotate pan.
  17. Bake another to 10 minutes or until the loaves are golden brown.
