Grilled Romaine-Roasted Pepper Salad with Back Rubbed Bacon & Blue Cheese

  • 2 Each-Romaine Hearts
  • To Drizzle-Olive Oil
  • To Taste-Chef Troy’s Spice Mix
  • 1 Pound-Bacon-thick sliced
  • To Taste-Chef Troy’s Back Rub
  • 1 Each-Roasted Red Bell Pepper-stem/seeds removed, cut into thin strips
  • ½ Cup-Blue Cheese-crumbled
  • ½ Cup-Carrot-shredded
  • To Taste-Onion-thin sliced
  • 1 Cup-Foccacia Croutons-recipe below

Directions

  1. Preheat oven to 350 degrees
  2. Lay bacon on a work surface; season both sides with Back Rub.
  3. Place on a baking sheet lined with parchment paper or a bakers rack.
  4. Cook bacon until just starting to get crispy, remove and allow to cool.
  5. Cut bacon into thin strips and set aside.
  6. Preheat grill for direct heat grilling to medium high heat.
  7. Cut romaine in half long ways, leaving the root end intact.
  8. Place on a baking sheet cut side up, drizzle with olive oil.
  9. Season with Spice Mix, place romaine over direct heat cut side down.
  10. Grill until slightly charred about 1 to 2 minutes and remove from grill.
  11. Thinly cut romaine, about ¼” thick, and place in a large mixing bowl with the roasted red bell peppers.
  12. Add Back Rub bacon, onion, carrot and blue cheese.
  13. Drizzle a small amount of the dressing and toss, add more dressing to coat as desired.
  14. Place salad on a serving platter or individual plates, top with croutons and serve.

Dressing

  • 1/2 Cup-Extra Virgin Olive Oil
  • 1/4 Cup-Red Wine Vinegar
  • 1 Teaspoon-Dijon Mustard
  • 1 Teaspoon-Chef Troy’s Spice Mix

Place all ingredients in a jar with a tight fitting lid and shake until all ingredients are well combined.

Croutons

  • 2 Cups-Foccacia-or grilled pizza dough, oil, seasoned with Spice Mix and grilled
  • To Drizzle-Olive Oil
  • 1 Teaspoon-Chef Troy’s Spice Mix
  • ½ Cup-Parmesan Cheese

Directions

  1. Preheat oven to 325 degrees.
  2. Cut foccacia into cubes, place in a mixing bowl and lightly drizzle with oil.
  3. Add Spice Mix, parmesan and toss to coat.
  4. Place in an iron skillet or oven safe pan and place in oven.
  5. Cook for 3 minutes, shake pan and continue to cook until croutons are golden and crunchy.
